A small independent wine merchant with the aim of providing you with a portfolio of interesting wines from small growers around the world. The last twenty years have been spent visiting various wine regions in France, and more recently South Africa, where contacts, and indeed friendships, have developed with numerous proprietors. Their pledge of support to our business has been the foundation to the building of our current Wine List, and we hope that you enjoy perusing through it. Look out for our regular tastings held either here at The Wine Studio in Thorington Street and also our annual autumn tasting held in Dedham; we have also had great fun in running tastings in conjunction with our restaurant clients with the ‘home’ chef matching a menu to the visiting winemaker’s wines.
Judges will be looking in particular at the following:
- Inventive use of locally sourced produce
- Offering a selection of menus, containing a range of dishes, including balanced healthy options and dietary consideration
- A variety of drinks to complement menu, including the wine list
- Presentation of food
- Evidence of specialist skills – in the preparation, presentation and production of the food
- Value for money
- Atmosphere and ambience reflective of the style of the establishment
- Staff awareness of menu(s) and as appropriate, an ability to explain the locality and choice of the ingredients
- Meeting customer needs, both in the production of the food and in the service area
- Strategies to show how customers are attracted and retained
- Evidence of national recognition and ratings i.e rosettes, listings and awards
